Keto Avocado Salad

Ingredients:

  • 2 ripe avocados, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves, chopped (optional)

Directions:

  1. In a large bowl, combine diced avocados, cucumber, red onion, and cherry tomatoes.
  2. Drizzle olive oil and lemon juice over the salad.
  3. Season with salt and pepper to taste.
  4. Toss gently to combine.
  5. Garnish with fresh basil leaves if desired. Serve chilled.
