Keto Chicken Alfredo

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon xanthan gum (optional for thickening)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook chicken breasts until golden brown and cooked through, about 6–8 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add heavy cream, Parmesan cheese, garlic, Italian seasoning, and xanthan gum.
  6. Stir until sauce thickens, about 5 minutes.
  7. Slice chicken and serve over the Alfredo sauce. Garnish with fresh parsley.
