Low Carb Chicken Tortilla Soup!! 🍲

Servings: 8

Ingredients:
2 tablespoon avocado oil
1 onion chopped
2 garlic cloves
1 jalapeño chopped
8 cups chicken broth
1 canned diced tomatoes
2 cups shredded chicken (you can use a rotisserie chicken to make life easier 🥰)
1 tbsp cumin
1/4 cup lemon juice
1 tsp paprika
1 tsp cumin
1 tsp garlic powder
Salt & pepper to taste
sugar free honey

Toppings:
low carb tortillas
Cilantro
Avocado
Cheese

Directions:
1. Start off by sautéing the onion, garlic, and jalapeños with the oil on medium high heat.
2. Add the chicken broth, diced tomatoes, lemon juice, chicken, seasonings, and stir!
3. Let it simmer for 15–20 minutes on low heat.
4. While the soup is simmering, cut the low carb tortillas intro strips and fry them in avocado oil till they are golden brown and crispy!
5. Top it off with some cilantro and avocado for those healthy fats and enjoy!
